Shirred Eggs

I love eggs, but I am NOT a morning person.  Many times after I get home from a long day from work, an egg is one of the easiest and most satisfying dinners.  While simple scrambled eggs are a typical go-to dinner, but Tuesday night I wanted something different.

I had pinned several recipes for baking eggs on Pinterest, so I decided to try it out.  Baking eggs is a great way to cook lots of eggs at one time – so it might become my go-to brunch dish.

The eggs bake up perfect and even.  The yolks are nice and runny, and when mixed with the tomato sauce give a silky texture.

Next time you’re in the mood for some eggs – try baking them!


1 cup jarred marinara sauce
2 eggs
shredded cheddar and monteray jack cheese
salt and pepper

Preheat your oven to 425 degrees.  In a dish, spread the marinara in the bottom of your dish.  Place your eggs on top of the sauce.  Sprinkle with salt and pepper, and top with cheese.

Place in the middle of your hot oven for 7-11 minutes – 7 minutes for soft cooked and 11 minutes for medium cooked.
