It’s the end of the month and pay day is on Friday, so this week I’ve been trying to eat out my pantry and freezer to save some precious cash.  At 5 p.m., I found myself standing in the middle of my small galley kitchen with the freezer, refrigerator and pantry doors wide open trying to figure out what I was going to throw together for dinner. That’s when inspiration hit.

I said to myself, “Self, you just made those delicious dinner rolls perfect for sliders. Hazzah!”  Since I live alone right now, no one can prove that I didn’t actually say this out loud with a fist pump.  While I didn’t have any hamburger, I do have individually wrapped frozen chicken breasts, some buffalo sauce, ranch dressing and cheddar cheese.  Sounds like the making of buffalo chicken sliders.

This dinner couldn’t have been more simple to prepare.  After the chicken thawed, I helped cut down on cooking time by thinly slicing the chicken into strips.  Then, I sauteed the chicken in a frying pan with a little olive oil for 10 mintues, until slightly brown and cooked through.  I then added the buffalo sauce to coat the chicken.  Done!

Perfect weeknight dinner in under 15 minutes straight out of the pantry.  Maybe I will make it to Friday!
