It’s Olympics time, and I spent all weekend engrossed in the action. I can’t get enough of that sporty action. I even watched my first water polo match – hello, water polo men.
In celebration of the great host country, I thought of making some delectable crackers made of two things distinctly British – stilton blue cheese and walnuts. Seriously, that just screams “Cheerio!”
I love making cheese crackers (like the cheddar ones I’ve made before) – they are so easy and versatile.
This time around, I whipped these up in my food processor. Next time I might just use my stand mixer instead to get more chucks of blue cheese and walnut. This time everything got mixed up pretty evenly. To each his own – right?
Ingredients
1/4 pound of butter, room temperature
8 oz. stilton blue cheese, room temperature
2 cups walnuts, chopped
1 cup flour
In a food processor, mix together the blue cheese and the butter with the flour until a soft dough forms. Start adding the chopped walnuts and mix until combined.
Take the dough out and put it on a sheet of parchment or wax paper. Form into a log and wrap the paper around the log. Refrigerate for 1 hour.
To bake, preheat the oven to 400 degrees. Unwrap the dough and slice the crackers in 1/4 inch slices. Place on a lined cookie sheet and bake 20 minutes or until golden on the edges. Allow to cool on a baking rack.
