I love BLT’s. In the summer, they are perfection with a fresh tomato, crisp bacon and lettuce. I am a purist and most of the time this is it. The sweet, juicy tomatoes with the bright lettuce and the salty, smokey, crispy bacon. Perfection.
Well, last night I wanted to try something a little different. I wanted to use my wonderful new Benton’s Bacon in a play on a BLT – a lettuce wrap with a BLT salad. Think chicken salad but with tomatoes and veggies and crisp bacon. By adding more veggies than just tomatoes, I felt less guilty, and the flavors are bright and delicious.
BLT Lettuce Wraps
1 container of cherry or grape tomatoes, halved and sliced
1/2 red pepper, diced
1 tbsp red onion, minced
1/2 ear of fresh corn, cut from the cob
1/2 avocado, diced
1/2 pound Benton’s Hickory Smoked bacon, diced and fried-crisp
1/4 cup greek yogurt
1/4 cup mayonnaise
pepper and salt to taste
Bibb Lettuce, whole leaves
Gently mix together all of the ingredients until well combined. Scoop a little of the “salad” mixture on the lettuce and wrap like a taco.
