Spinach and cheddar filled omelette

It took many years for me to realize that I love a perfectly crafted omelette.  Now, a classic omelette is one of my favorite meals.  Whether for breakfast or lunch or dinner or midnight snack – if you’ve got eggs, you’ve got an omelette.

The trick to omelettes are not ingredients but all technique.  The trick is cooking the bottom and the top evenly, while keeping the egg tender.  My favorite teacher is none other than my favorite Food Network celebrity chef – Alton Brown. After watching part one and part two and a little bit of practice – you too, can create French omelettes with ease.  And don’t worry – even Julia Child messed up an omelette or two.
